<p><strong>INGREDIENTS (2 SERVINGS):</strong><br />
Soba buckwheat noodle &#8212; 160g<br />
Cucumber &#8212; ½ piece<br />
Cherry tomato &#8212; 10 pieces<br />
Whole kernel corn &#8212; 40g<br />
Oba leaf &#8212; 4 pieces<br />
Nijiya Soba tsuyu sauce &#8212; 100ml<br />
Sesame oil &#8212; 1 tablespoon<br />
Lemon &#8212; as appropriate</p>
<p><strong>DIRECTION:</strong><br />
1. Cut cherry tomatoes in half, and cut cucumber and Oba leaf into thin strips. Drain water from corn.<br />
2. Boil Soba buckwheat noodle with plenty of hot water, soak, and strain it well.<br />
3. Move the Soba buckwheat noodle into container, add sesame oil, and add items from line 1 and Nijiya soba tsuyu sauce. Mix them well.<br />
4. Decorate them on a bowl and garnish with lemon slices.</p>

そば（乾麺）…160ｇ<br />
キュウリ…1/2本<br />
ミニトマト…10個<br />
コーン（ホール缶詰）…40ｇ<br />
シソ…4枚<br />
ニジヤそばつゆ…100cc<br />
ごま油…小さじ1<br />
レモン…適量</p>
<p><strong>作り方：</strong><br />
1：ミニトマトは半分、キュウリとシソは千切りにする。コーンの水気は切っておく。<br />
2：そばをたっぷりのお湯で指定時間ゆでて水洗いし、よく水気を切る。<br />
3：そばをボウルに入れてごま油をまぶし、１の材料とニジヤそばつゆを加えて和える。<br />
4：器に盛って、レモンを添える。</p>

<p><strong>Ingredients (Serves 4) ：</strong><br />
Sushi rice to serve 4<br />
3 Japanese cucumbers<br />
A pinch of salt </p>
<p><Salmon flakes><br />
3 slices of salmon fillet<br />
3 tablespoons mirin (Japanese sweet cooking rice wine)<br />
2 tablespoons sake<br />
A pinch of salt </p>
<p>A pinch of black sesame seeds<br />
5 oba (green perilla) leaves </p>
<p><strong>Cooking Directions ：</strong><br />
1. Thinly slice the cucumbers. Sprinkle with salt and let stand for a while.<br />
2. Remove the skin from salmon and cook in a pan with mirin, sake and salt. Use a rice scoop to break the fish into flakes as you cook.<br />
3. Squeeze the cucumbers to drain the water. Mix with sushi rice, salmon flakes and sesame seeds.<br />
4. Julienne oba leaves and sprinkle them over the rice mixture. </p>

２. 紅鮭の皮を取り、鍋にみりん、酒、塩と共に入れてしゃもじでほぐしながら炒り煮する。<br />
３. きゅうりの水気を手で絞り、鮭そぼろ、ごまと共にすし飯に混ぜ込む。<br />
４. 大葉を千切りにして上からちらして仕上げる。</p>

3.5 oz. pork belly<br />
2 eggs<br />
1 stalk green onion (chopped)<br />
1 tablespoon soy sauce<br />
1 tablespoon mirin (Japanese sweet cooking rice wine)<br />
1 tablespoon of grated fresh ginger root<br />
Oil (as needed)</p>
<p><strong>Cooking Directions: </strong><br />
1. Mix the soy sauce, mirin and grated ginger in a bowl, and marinate the pork for approximately 10 minutes.<br />
2. Heat oil in a frying pan, and sauté the marinated pork.<br />
3. Beat the eggs and pour into the pan. Turn off the heat, and allow the egg mixture to finish cooking in the residual heat.<br />
4. Sprinkle with chopped green onion to finish. </p>

3. 溶いた卵を入れ、余熱で固める。<br />

<p>It’s a beautiful handmade purple pudding.<br />

<p><strong>Ingredients (8 pudding molds):</strong><br />
Approx. 7 oz. Purple Sweet Road<br />
1-1/2 oz. sugar<br />
2 eggs<br />
1 oz. butter<br />
3/4 cup milk<br />
1/4 cup fresh cream </p>
<p><strong>Cooking Directions: </strong><br />
1. Cook the Purple Sweet Road until soft (by boiling or in a microwave on low heat setting). </p>
<p>2. Puree the potato while still hot. Put water in an ovenproof to approx. 1/2 inch in depth, place in the oven and preheat the oven to 320°F (160°C). </p>
<p>3. Mix the butter, sugar and beaten eggs into the pureed Purple Sweet Road. Mix in the milk and fresh cream. </p>
<p>4. Pour the mixture into a mold and bake for 30 minutes. (Garnish with caramel source or whipped cream as desired.) </p>

パープルスイートロード…約200g<br />
砂糖…40ｇ<br />
卵…2個<br />
バター…30ｇ<br />
牛乳…200ml<br />
生クリーム70ml<br />
　　<br />
<strong>作り方：</strong><br />
1. パープルスイートロードをやわらかくなるまで加熱する（茹でても、レンジでも可）</p>
<p>2. 温かいうちに裏ごしする。オーブンの天板に1cmほどの水を張って320°F （160℃）に予熱しておく。</p>
<p>3. 裏ごししたパープルスイートロードにバター、砂糖、溶き卵をまぜ、牛乳、生クリームも混ぜ合わせる。</p>
<p>4. 型に流し入れ、320°F（160℃）のオーブンで30分焼く。（お好みでカラメルソースやホイップクリームをトッピングしても）</p>

<p><strong>Ingredients (Serves about 5):</strong><br />
Approx. 14 oz. Purple Sweet Road<br />
3/4 cup water<br />
1/2 teaspoon gelatin powder<br />
2 oz. sugar<br />
Pinch of salt<br />
1 tablespoon milk </p>
<p><strong>Cooking Directions:</strong><br />
1. Peel the Purple Sweet Road by removing more skin than usual, and place in water for 20 minutes. Put the Purple Sweet Road in a pan, add just enough water to cover the potato, and cook until soft. </p>
<p>2. Discard water and puree the potato while still hot.  </p>
<p>3. Put the water and gelatin powder in a pan, and mix them over medium heat until the powder dissolves. Boil the mixture for 1 minute, and then add the sugar, salt, and milk. Remove from heat and mix until the sugar dissolves. </p>
<p>4. Add the gelatin mixture to the potato little by little, and mix well. </p>
<p>5. Pour the mixture into a container moistened with water, and flatten the top surface. </p>
<p>6. Chill the container in a refrigerator. When the jelly is firm, remove it from the container and cut into pieces of the desired size. </p>

紫いも…約400ｇ<br />
水…190ｍｌ<br />
粉寒天…2ｇ<br />
砂糖…55ｇ<br />
塩…ひとつまみ<br />
牛乳…大さじ1</p>
<p><strong>作り方：</strong><br />
1．.紫いもは厚めに皮をむいて水に20分さらす。鍋に.紫いもとひたひたのお水をいれ、やわらかくなるまで茹でる。</p>
<p>2．茹で上がったらお湯を捨て、熱いうちに裏ごしする。（つぶすとねっとりとしてくる）</p>
<p>3．鍋に水と粉寒天を入れて、中火にかけ、かきまぜながら煮溶かす。1分半沸騰させたら砂糖、塩、牛乳を入れ、火を止めて砂糖を溶かす。</p>
<p>4．2に3を入れて少しづつ混ぜていく。</p>
<p>5．水に濡らした容器に流し入れ、表面を平らにする。</p>
<p>6．冷蔵庫で冷やし固めたら容器からだして切り分ける。</p>

2 oz. kiriboshi daikon (dried, shredded daikon radish)<br />
(Salad Dressing)<br />

1 tablespoon soy sauce<br />
1 tablespoon kurozu (black vinegar)<br />
Pinch of salt and pepper</p>
<p><strong>Cooking Directions:</strong><br />
1. Allow kiriboshi daikon (dried radish) to reconstitute in water, squeeze the water from it and cut into bite-size lengths.</p>
<p>2. Wash kaiware daikon (radish sprouts) with water, and cut into bite-size lengths.</p>
<p>3. Blend all the salad dressing ingredients. Mix in the dried radish and radish sprouts  with the dressing.</p>

<p><strong>Ingredients (Serves 4):</strong><br />
1packages kaiware daikon<br />
Ikura (salmon roe), shrimp, sashimi and your choice of ingredients<br />
Nori (seaweed) for sushi hand roll (as much as needed)<br />
4 servings sushi rice (vinegared rice)</p>
<p><strong>Cooking Directions:</strong><br />
Place the sushi meshi (vinegared rice) on top of the nori (seaweed), add plenty of kaiware daikon and your choice of other ingredients, and roll the nori.<br />
Add your choice of ingredients, including cheese and tamago-yaki (Japanese omelette), and enjoy!</p>

<p><strong>Ingredients (Serves about 6):</strong><br />
1 cup water<br />
0.7 oz. granulated sugar<br />
1/2 teaspoon kanten (agar) powder<br />
1 teaspoon Catechin Green Tea Powder<br />
Olive oil (to taste)<br />
Fruit(s) of your choice, such as strawberries, pineapple, apples and kiwi<br />
Herb(s) of your choice, such as mint and rosemary</p>
<p><strong>Cooking Directions:</strong><br />
1. Place sugar, kanten (agar) powder and green tea powder in a bowl, and mix lightly.<br />
2. Add water a little bit at a time and work into the mixture until there are no lumps.<br />
3. Pour the mixture into a pan, and bring to a boil while mixing.<br />
4. Strain the mixture through a sieve. Pour it into a flat container and allow it to harden in the refrigerator.<br />
5. Cut the hardened yokan jelly into cubes. Serve on a plate with your favorite fruits and herbs, and pour olive oil over the top just as you would pour salad dressing.</p>

<p><strong>作り方：</strong><br />
1：グラニュー糖、寒天パウダー、粉末茶をボールに入れ軽く混ぜ合わせる。<br />
2：水を少しづつ1にダマにならないように混ぜ入れる。<br />
3：２を鍋に移し替え、混ぜながら沸騰させる。<br />
4：網で3を漉し、平らな容器に流し入れ、冷蔵庫で固める。<br />
5：４をキューブ状に切り、お好みのフルーツ、ハーブとともにプレートに飾り、オリーブオイルをドレッシングのようにかける。</p>

<p><strong>Ingredients (Serves 4) :</strong><br />
10 oz. tuna (sashimi grade, red flesh)<br />
Cooked rice (as appropriate)<br />
2 avocados<br />
Chopped green onion (to taste)<br />
1 tablespoon fresh lemon juice<br />
Wasabi (grated green horse radish) (to taste)<br />
[A]<br />
1-1/2 tablespoons soy sauce<br />
1/2 teaspoon salt<br />
1/2 tablespoon chili oil<br />
1 tablespoon salad oil<br />
1 tablespoon roasted sesame (white) </p>
<p><strong>Cooking Directions: </strong><br />
1. Cut the tuna into cubes, add [A], and mix in the chopped green onion. </p>
<p>2.Peel the avocados. Cut them into cubes, and sprinkle with fresh lemon juice. </p>
<p>3.Place the cooked rice in a bowl and top with tuna and avocado. Add wasabi as desired. </p>

Making homemade datemaki is easier than you think, and it requires only a few ingredients. You can also adjust the sweetness to suit your taste.<br />
材料も作り方も意外とかんたん。甘さも自由に調整できます。<br />

<strong>Ingredients (serves 2): </strong><br />
4 eggs<br />
1-1/2 hanpen (whitefish cake)<br />
[Seasonings]<br />
4 tablespoons kibi sugar (cane sugar)<br />
1 tablespoon mirin<br />
1 tablespoon sake A dash of salt<br />
1 teaspoon vegetable oil </p>
<p><strong>Cooking Directions:</strong><br />
[1]Place the cubed hanpen, eggs, and seasonings in a food processor or a blender. Blend until smooth. If not using a food processor, put the hanpen in a strainer and press it through once. Combine with the rest of the ingredients and strain one more time to achieve a smooth consistency.<br />
[2]Heat the vegetable oil in a frying pan over medium heat. Pour the mixture into the pan. Cover and cook over low heat for about 15 minutes until it’s heated through. When a toothpick that&#8217;s inserted comes out clean, turn the heat off and let stand for about 3 minutes to steam.<br />
[3]Place the omelet on a cutting board. Trim the sides to form a square.<br />
[4]Line a makisu (bamboo mat) with plastic wrap. Place the omelet on the plastic wrap. Lift the front edge of the mat and roll it away from you. Use rubber bands to hold the roll together and let stand. Slice it to your preferred thickness. </p>
<p><strong>材料（2人分）: </strong><br />
たまご…4個<br />
はんぺん…1枚半<br />
[調味料]<br />
きび砂糖…大さじ４<br />
みりん…大さじ１<br />
酒…大さじ１<br />
塩…少々</p>
<p>サラダ油…小さじ１</p>
<p><strong>作り方:</strong><br />
１．フードプロセッサー、またはミキサーに角切りにしたはんぺんとたまご、調味料を入れ、なめらかになるまで混ぜる。フードプロセッサーが無い場合ははんぺんをこし器でこし、他の材料を混ぜたあと再びこして生地をなめらかにする。<br />
２．フライパンにサラダ油を入れて中火にかける。生地を流しいれ、ふたをして約15分弱火で中まで火を通す。竹串をさして何もつかなくなったら、火を止めて3分くらい蒸らす。<br />
３．焼きあがったらまな板にのせ、正方形になるように端を切る。巻きすの上にラップを敷き、手前からくるくると巻いて、ゴムなどでとめてしばらく置いておく。お好みの厚さにカットして出来上がり。</p>
