Homemade Datemaki (Japanese sweet rolled omelet) |
手作り伊達巻


Making homemade datemaki is easier than you think, and it requires only a few ingredients. You can also adjust the sweetness to suit your taste.
材料も作り方も意外とかんたん。甘さも自由に調整できます。

Ingredients (serves 2):
4 eggs
1-1/2 hanpen (whitefish cake)
[Seasonings]
4 tablespoons kibi sugar (cane sugar)
1 tablespoon mirin
1 tablespoon sake A dash of salt
1 teaspoon vegetable oil

Cooking Directions:
[1]Place the cubed hanpen, eggs, and seasonings in a food processor or a blender. Blend until smooth. If not using a food processor, put the hanpen in a strainer and press it through once. Combine with the rest of the ingredients and strain one more time to achieve a smooth consistency.
[2]Heat the vegetable oil in a frying pan over medium heat. Pour the mixture into the pan. Cover and cook over low heat for about 15 minutes until it’s heated through. When a toothpick that’s inserted comes out clean, turn the heat off and let stand for about 3 minutes to steam.
[3]Place the omelet on a cutting board. Trim the sides to form a square.
[4]Line a makisu (bamboo mat) with plastic wrap. Place the omelet on the plastic wrap. Lift the front edge of the mat and roll it away from you. Use rubber bands to hold the roll together and let stand. Slice it to your preferred thickness.

材料(2人分):
たまご…4個
はんぺん…1枚半
[調味料]
きび砂糖…大さじ4
みりん…大さじ1
酒…大さじ1
塩…少々

サラダ油…小さじ1

作り方:
1.フードプロセッサー、またはミキサーに角切りにしたはんぺんとたまご、調味料を入れ、なめらかになるまで混ぜる。フードプロセッサーが無い場合ははんぺんをこし器でこし、他の材料を混ぜたあと再びこして生地をなめらかにする。
2.フライパンにサラダ油を入れて中火にかける。生地を流しいれ、ふたをして約15分弱火で中まで火を通す。竹串をさして何もつかなくなったら、火を止めて3分くらい蒸らす。
3.焼きあがったらまな板にのせ、正方形になるように端を切る。巻きすの上にラップを敷き、手前からくるくると巻いて、ゴムなどでとめてしばらく置いておく。お好みの厚さにカットして出来上がり。
